If I go through a proxy, does my ISP still get my traffic and log it, or
does it just see that I am sending something through a proxy?

If you aren't tunnelling via stunnel or some other encrypting method,
then yes, your ISP can see what you are doing via a proxy and log it if
they want to. If you are encrypting the traffic in some way, then all
they can see is that you are using a proxy.
